Ramadan drink recipe: Lime and barley water

Barley is considered a cooling food, which makes this drink perfect after a long hot day's fast

For 4 glasses | Preparation time: 10 mins | Infusing time: 24 hours | Difficulty: easy

Ingredients

1l water

125g pearl barley

10 large unwaxed limes, juiced and zest finely grated

175g granulated sugar

1 lime, halved and sliced

Ice cubes

Method

1. Cook the barley in boiling water for 4 minutes, then drain well and transfer to a large mixing bowl.

2. Stir in the lime juice, zest and sugar. Boil then pour over the water and stir until the sugar dissolves.

3. Cover the bowl and leave the mixture to infuse in the fridge for 24 hours.

4. Strain the barley water through a fine sieve into a jug and serve with sliced lime and plenty of ice cubes.
