Don’t get into a pickle, instead make delicious lime pickle in 15 minutes!



Preparation time: 15 minutes

Cooking time: 6 to 8 minutes

 

Ingredients

10 small limes

2 green chillies (chopped)

2 tbsp ginger (chopped)

1 garlic pod (chopped)

½ tsp turmeric powder

2 tbsp red chilli powder

½ tsp fenugreek powder

½ tsp asafoetida

1 sprig of curry leaves

1 tsp sugar

1 tbsp vinegar

3 tbsp sesame oil

1 tbsp mustard seeds

Salt to taste

 

Method:

Step 1:

Wash and clean the sweet lime and wipe them with a towel. Ensure that they are well dried.

Step 2:

Cut the lime into quarters lengthwise.

Step 3:

Transfer the lime pieces to a cooking pot, preferably a clay pot.

Step 4:

Add chopped green chillies, ginger, garlic, salt, turmeric powder, red chilli powder, fenugreek powder, asafoetida, curry leaves, sugar, and vinegar. Mix everything well.

Step 5:

Cover the pot and cook over a low flame for about six to seven minutes, stirring occasionally. Once cooked, turn off the flame and keep aside.

Step 6:

Finally, heat sesame oil in a pan, splutter the mustard seeds and pour the mixture over the cooked lime mix. Once it cools completely, transfer it to a glass jar. The lemon pickle is now ready to be served.
