Video recipe for Kerala-style Chicken Roast or Nadan Chicken Roast



Preparation Time: 15 mins 

Cooking time: 30 mins 

Serves: 5 

Ingredients 

1 kg chicken, cut into curry size pieces 

200 gms chopped onion 

50 gm sliced onion (for frying) 

1 ½ tsp of pounded ginger 

2 ½ tsp of pounded garlic 

4 tbsp cooking oil 

1 tomato, blanched and pureed

3 tbsp Kashmiri chilli powder 

3 green chillies 

½ tsp turmeric powder 

1 tsp black pepper powder 

1 ½ tsp white vinegar 

½ cup water 

1 sprig of curry leaves 

Salt to taste 

  

For the garam masala: 

8 cloves 

3 cardamom 

1 ½ inch cinnamon piece 

  

Method 

Step: 1

Clean and wash the chicken pieces and keep aside.

Step: 2

Gently dry roast the garam masala ingredients in a small pan and then grind and keep it aside. 

Step: 3

 Heat 2 tablespoons of oil in a deep pan on medium heat. Add pounded garlic and ginger, sauté for a couple of minutes or till the raw   smell dissipates. 

 Step: 4

 Add sliced onion and sauté until translucent. Add a bit of salt to speed up the process. Add sliced green chillies and a sprig of curry   leaves and sauté further for a few seconds.  

 Step: 5

 Add turmeric powder and stir for a few seconds over low flame. Then add the chilli powder and sauté for a few seconds further or till the   raw smell dissipates. 

Step: 6

 Add the tomato puree and stir for approximately 30 seconds. Then add chicken pieces and give a good stir till the masala coats the chicken well. 

Step: 7

 Sprinkle Salt to taste. Add black pepper powder, garam masala and mix it well. 

 Step: 8

 Add ½ cup of water and 1 ½ tsp of vinegar and mix well. Cover and cook over medium flame till the chicken is well done. Stir   occasionally to avoid the gravy/chicken from getting scorched at the bottom. This process takes approximately 25 minutes. In case the   curry is watery, cook the chicken with the vessel uncovered, until the desired consistency is reached. 

Step: 9

 Heat 2 tablespoons of oil in a pan. Fry the remaining sliced onion till it turns golden. Keep aside. Fry the cooked chicken pieces over   low flame for about 4 minutes on each side. 

 Step: 10

 Finally, in a serving bowl/plate, serve gravy and the fried chicken together with the onions as garnish.
