Ingredients
4 large ripe figs
Rocket leaves
Crumbled goat's cheese
¼ cup Pomegranate
½ cup walnuts
Mint leaves
Dressing
Kosher salt
Crushed black pepper
Balsamic vinegar
Lemon juice
Olive oil
Method
1. Toast the walnuts in an oven for 5 minutes.
2. Cut the figs into four.
3. Mix the dressing in a small bowl.
4. Toss the rocket leaves with the walnuts, mint, pomegranate, and half of the dressing.
5. Add the figs and the rest of the dressing.
6. Sprinkle with the crumbled goat cheese.
