    4 pieces breast of chicken

    90gm butter

    15gm freshly chopped parsley

    15gm fresh garlic crushed

    Seasoned flour

    1 egg yolk

    180gm breadcrumbs

Method

1. Remove skin from the chicken breast. Remove all bones. Gently beat out flesh of chicken until it has doubled in size.

2. Mix butter, garlic and parsley together, then roll into finger shaped pieces.

3. Put the finger shaped butter into the centre of the chicken breast.

4. Wrap the chicken around the butter forming a cylinder shape. Coat chicken in flour, beaten egg and breadcrumbs.

5. Gently deep fry until golden brown. Serve with rice and vegetables.
