4 tbsp sesame seeds
2 tbsp white wine vinegar
2 oranges, thoroughly peeled and cut into 5mm slices, juice reserved
½ tsp runny honey
½ tsp medium hot mustard
2-3 tbsp olive oil
Salt and ground black pepper, for seasoning
1. Toast the sesame seeds in a non-stick frying pan without fat until golden, stirring.
2. Whisk the vinegar, orange juice, honey and mustard together and season with salt and ground black pepper. Whisk in the oil to form a vinaigrette.
3. Arrange the orange slices on plates. Dress rocket with the dressing and arrange on the oranges. Shave Parmesan over the top and serve sprinkled with sesame seeds. You can have this as a cold salad too.
