On the fourth day of Xmas... sugared brioche

Why stop at a holiday cake when you can make brioche in an hour!

Ingredients

360 gms bread flour

44 gms whole wheat flour

40 ml water

60 gms fine caster sugar

10 gms salt

8 gms yeast

3 eggs

1 cup of butter, melted

Method

1. Combine the flour, water, sugar, salt, and yeast in a stand mixer with a dough hook, or simply use a bowl and wooden spoon.

2. Mix it well for 5 minutes. Add the eggs, one at a time and continue to mix.

3. Add the butter in small portions at regular intervals, mixing between each addition. Knead until smooth.

4. Transfer the dough to a lightly greased bowl, and cover it. Leave it to prove in a warm room for about 1 hour until it doubles in size.

5. Preheat the oven to 200C. Lightly punch the dough down and shape it to fit in a small loaf pan.

6. Cover and prove for another 30 minutes before brushing with eggs.

7. Top the brioche dough with the pearl sugar and bake it for 20 to 30 minutes until golden brown.

8. Serve and enjoy!
