Make Serbian proja or cornflour bread for Coptic Xmas

A traditional dish served during the festive season which can be made under an hour!

Ingredients

3 eggs

300 gms cornflour

200 gms  wheat flour

150 ml oil

150 ml milk/ laban / sparkling water 

1/2 teaspoon baking soda 

Salt as per taste

Method

1. Put everything together in a bowl and mix it. You can also add spinach or cottage cheese.

2. Pour the mixture in a baking pan or a cupcake pan.

3. Put it in a preheated oven for 30 minutes at 180°C. It’s ready when proja gets golden in colour and crispy.

4. Serve it warm with cheese, ajvar (condiment from sweet bell peppers) or the best for me is with sarma.
