Ingredients

300 gms bakers block  - 70 per cent dark chocolate or single-origin dark chocolate

230 gms white sugar

105 gms all-purpose flour

3 large eggs

155 gms unsalted butter

Method

1. Preheat the oven to 135 C (275F).

2. In a large bowl combine the eggs and sugar. Whisk until obtaining a floppy texture using a stand mixer or a hand whisk, then set it aside.

3. In a microwavable bowl, chop 70 per cent dark chocolate bakers block into small pieces and melt them in the microwave. Make sure to stir the chocolate with a rubber spatula every 10 seconds to avoid burning it. Add butter and stir until they melt.

4. Add the eggs and sugar mixture to the melted chocolate and butter.

5. Mix them together with a spatula. Then, add flour, and stir until a medium-thick consistency mixture is formed.

6. Pour the mixture into a greased or lined 9x13 pan, and bake it for 35 minutes.

7. Use a toothpick to check if it's ready: when the toothpick comes out almost clean, it's time to take out the  brownies from the oven.

8. Let it cool down at room temperature for a few hours.

9. Remove the brownie from the pan and cut it into squares.

10. Enjoy your delicious homemade brownie. You can also have it with a scoop of gelato.
