UAE chef abandons fish dish for World Oceans Day
Award-winning UAE chef to discontinue signature baby hammour dish to mark World Oceans Day at the behest of Gulf News.

- Executive Chef Vinod Kumar at The Country Club, Dubai, decided to take his fish recipe off the menu after Gulf News informed him of the Federal Decree that prevents baby hammour from being caught.
Fish stocks around the world are either being stressed to their limit or facing decline because of overfishing.
The day marked by United Nations is an attempt to highlight the terrible toll that human activity is taking on marine ecosystems - corals and important fisheries are being damaged by over-exploitation, illegal, unregulated and destructive fishing practices.
Executive Chef Vinod Kumar at The Country Club, Dubai, decided to take his fish recipe off the menu after Gulf News informed him of the Federal Decree that prevents baby hammour from being caught.
He is the first chef in the country to be awarded the World Association of Chefs Society (WACS) certification, which is one of the highest honour in the world of cooking.
Kumar had made a trial recipe of a whole baby hammour fish stuffed with spicy pineapple and served in banana leaves, unaware of the national decree.
He said: "I did not know about the [ruling]. The dish was made on a trial basis. Even though the dish was approved to be added to the menu, I will make sure it does not happen.
