Watch how to make a Spanish omelette



Spanish omelette also known as tortilla de patatas is traditionally made with potatoes. Here's a version of the classic recipe. 

Preparation time: 5 minutes

Cooking time: 7 to 8 minutes 

Serves:

Ingredients

3 eggs, room temperature 

3 to 4 button mushrooms

½ cup mixed bell peppers, chopped

¼ courgette, sliced

1 tbsp shredded cheddar cheese

1 red onion, chopped

2/3 tbsp peeled potato, optional 

Method:

  1. Chop bell peppers, mushrooms, courgettes and onion.
  2. In a bowl, break eggs and whisk them.
  3. Heat a cast iron pan, add a few drops of oil, add vegetables, salt and pepper to taste.
  4. Then, pour the whisked egg onto it. Allow to cook for 3 to 5 minutes on medium heat.  
  5. Halfway through, sprinkle cheddar cheese on top.
  6. Then, safely hold the pan and place it in a preheated oven to get a golden brown colour. Let it cook for a further 6 to 7 minutes at 175C.    

Remove it from the oven and serve with warm toasted bread and your favourite cup of coffee.
