What is pancake cereal?
Pancake cereal is exactly what the name suggests - mini pancakes in cereal size and form. For those who aren't aware, pancakes are a classic American breakfast dish that are thin, flat cakes cooked on a pan. It's a delicious breakfast option that is both soft and fluffy with a crispy exterior. These tiny pancakes are incredibly versatile and make for a fun and tasty cereal option. Plus, they absorb milk really well! The best part? You can make them from scratch in just 20 minutes. Give them a try for your next breakfast.
Pancake cereal recipe
The process of making pancake cereal is effortless. You need to prepare your regular pancake batter and pipe small circles of mini pancakes instead of a large, regular-sized pancake.

Serves - 2
Ingredients
45 gms butter
30 gms of super-fine sugar
1 whole egg
200 ml milk
1 tbsp lemon juice
160 gms all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
Milk, yoghurt and honey, as required for serving
Method
Melt the butter in a microwave-safe bowl for 30 seconds.
Whisk it to ensure it's fully melted. If not, heat it for another 10 seconds. Avoid overheating.
Add the sugar and mix until combined.
Crack an egg into the butter-sugar mixture and whisk it in until the sugar dissolves.
Mix in the milk and lemon juice.
Fold in the flour, baking powder, and soda to create a lump-free batter.
Let the pancake batter rest in the fridge for 10 minutes.
Take a non-stick pan and place it on medium heat.
Transfer the batter to a piping bag or squeezy bottle and cut a small hole in the tip.
Once the pan is hot, lower the flame and pipe small circles of batter (about 2 cm in diameter) onto the pan with equal spacing.
When you finish piping, increase the flame to a medium level.
When the mini pancakes start to bubble and appear dry, flip them over using a spatula and cook for another 40 seconds.
Repeat the process with the remaining batter until it's all used up.
Transfer the pancake cereal to a bowl and serve hot or cold with honey and milk.

1. You can customise the pancakes by adding chocolate chips or blueberries to the pancakes while cooking.
2. To make them crisper, squeeze out even smaller dots. Make sure the pan is hot to achieve a crisp brown exterior.
