Gulf News Food Show's Festive pudding with citrus and spice

A classic holiday dessert recipe from chef Jamey Pienaar, known for its rich, fruity, spiced flavour

Ingredients

Pudding

½ cup Apricot jam

1 cup Brown sugar

3 Eggs

½ cup Melted butter

1½ cups Flour

1 tsp Cinnamon powder

1 tsp Baking powder

1 tsp Baking soda

¼ tsp Salt

1 tbsp Vinegar

1 cup Mixed dry fruits (chopped)

½ cup Almond flakes

Zest of 1 Orange

Zest of 1 Lemon

Zest of 1 Ginger

White Sauce

½ cup Sugar

¼ cup Butter

1 cup Cream

1 tsp Vanilla essence

Method

In a mixing bowl, add the brown sugar and apricot jam. Use a whisk to combine them until the mixture is smooth and there are no lumps.

Crack the eggs  into the bowl and whisk vigorously for about 3 minutes. The mixture should become pale and frothy.

Slowly pour in the melted butter, continuing to whisk until fully combined.

Add the cinnamon powder, baking powder, baking soda, and salt to the bowl. Stir until everything is well mixed and incorporated.

Gradually drizzle in the vinegar, mixing gently to ensure it’s evenly distributed throughout the batter.

Gently fold in the chopped dry fruits, almond flakes, and the citrus zests (orange, lemon, and ginger) into the batter. Make sure not to overmix; you want to maintain a light texture.

Preheat your oven to 170°C (340°F).

Pour the pudding mixture into an oven-safe mold, filling it no more than halfway to allow for rising during baking.

Place the mold in the preheated oven and bake for 30 to 40 minutes. To check for doneness, insert a toothpick into the center of the pudding; it should come out clean when done.

While the pudding is baking, prepare the white sauce. In a saucepan, melt butter over medium heat.

Once melted, stir in the brown sugar and mix until fully combined.

Gradually pour in the heavy cream, whisking continuously. Continue cooking on medium heat, stirring frequently, until the sauce thickens slightly (about 5 to 7 minutes).

Add the vanilla essence to the sauce, stirring to combine it well.

After the pudding is baked and a toothpick comes out clean, remove it from the oven. Allow it to cool in the mold for about 10 minutes before carefully removing it.

Place the pudding on a serving plate.

Serve the pudding warm, alongside a scoop of your favorite ice cream. Drizzle the warm white sauce around the pudding for a delightful finish.

If desired, garnish with chocolate shavings for an extra touch of indulgence.

Tips:

For added richness, you can use a mix of different nuts in place of almond flakes.
