    2 tbsp Kashmiri tea leaves or green tea leaves

    8 cups water

    ¼ tsp baking soda

    3 cups milk

    1 stick cinnamon (optional)

    2 to 3 green cardamoms (optional)

    1 tsp butter

    Salt to taste

Method

1. Take 2 cups of water in a pan and place it on the gas. Add 1 cinnamon stick and 2 to 3 green cardamoms to it for a nice aroma.

2. Put 2 tablespoons of Kashmiri tea leaves into it and then add ¼ tsp of baking soda into it. Mix well and let it boil on medium flame until it reduces to ¼ cup of the original quantity.

3. Add 2 cups of water and let it evaporate. Repeat this process 2 to 3 times and until the tea becomes deep reddish in colour. Strain the tea and store in a jug.

4. Take 3 cups of milk and let it boil. Add 1 cup of the strained tea to the milk. Add salt as per your liking and finally you can put 1 teaspoon of butter into it.

5. Noon chai is ready!
