    For marinating the chicken

    200 gms chicken breast 

    5 gms low-fat yoghurt 

    3 gms dijon mustard 

    5 gms yellow mustard 

    2 ml lemon juice 

    5 ml olive oil 

    2 gms garlic 

    2 gms oregano 

    3 gms sea salt

    2 gms black pepper 

    For cooking the Freekeh

    100 gms freekeh - raw cleaned 

    5 ml olive oil 

    20 gms onions, chopped 

    5 gms garlic, chopped 

    1 cinnamon stick 

    2 gms cinnamon powder 

    250 ml vegetable stock water (in a pot add carrots and celery and onions with 250 ml of water on low heat)

    3 gms sea salt

    2 gms black pepper 

    For low-fat Tzatziki yoghurt 

    50 gms low-fat Greek yoghurt 

    3 gms mint, chopped

    5 gms garlic chopped 

    10 gms, cucumber skin

Ingredient Substitution Guide


Marinated Chicken 

1. Mix all the above ingredients along with the chicken breast and keep in the chiller for 3 hours.

2. Grill the marinated chicken breast until perfectly cooked.

Cooked Freekeh 

1. Heat the cooking pot, add the olive oil, add the onion and garlic, sauté well.

2. Add the cinnamon stick, cinnamon powder to the mix.

3. Add the freekeh to the mix and stir for 3 minutes, then add vegetable stock, salt, and pepper.

4. Cook the freekeh mix over low heat until the water reduces.

5. Move from heat, cover it well and keep it for 20 minutes to settle.

6. Serve the freekeh and add the chicken on top.

Low-fat Tzatziki yoghurt

1. Mix all the ingredients in a bowl.

2. Serve it in a bowl with the freekeh.
