Ingredients:
150 gms low-fat Greek yoghurt
30 gms honey
20 ml coconut cream (store-bought)
20 gms chia seeds
1 whole mango, diced
15ml passion fruit purée (store-bought)
22 gms gluten-free oats
8 gms almond, chopped
8 gms pecan, chopped
8gms pistachio, chopped
8gms walnut, chopped
8gms white quinoa
8gms pumpkin seed
8gms chia seed
8gms coconut oil
8gms maple syrup
Method:
To make the granola:
Preheat the oven to 140°C. Mix all the nuts, oats, maple syrup, and coconut oil in a large bowl until well combined.
Spread the mixture evenly on a large parchment-covered baking sheet.
Bake in the preheated oven for 15 to 20 minutes or until the granola is golden brown.
Remove from the oven and let it cool completely.
For the pudding:
In a bowl, mix the chia seeds with coconut cream and Greek yoghurt and let it soak for 90 minutes. Then, set it aside.
Dice the mango and mix it with the passion fruit purée.
Assembly:
In serving glasses, layer the mango-passionfruit mixture and chia pudding, starting and ending with the mango cubes.
Chill the assembled glasses in the fridge until ready to serve.
Right before serving, top each glass with the prepared granola.

Tips:
1. For the granola, you can customise the nuts and seeds according to your preference, including almonds, cashews, sunflower seeds, or pumpkin seeds.
2. When spreading the granola mixture on the baking sheet, try to achieve an even layer to ensure it bakes uniformly.
3. Keep an eye on the granola while it's in the oven, as it can quickly go from golden brown to burned. Stir the mixture if needed to ensure even browning.
4. When making the chia pudding, use full-fat canned coconut cream for a rich and creamy texture.
5. To enhance the flavour, add a touch of vanilla extract or a sprinkle of cinnamon to the chia pudding mixture.
6. Layer the mango-passion fruit mixture and chia pudding beautifully in serving glasses for an appealing presentation.
7. Allow the assembled glasses to chill in the fridge for at least an hour before serving to let the flavours meld together.
8. Add a dollop of Greek yoghurt or a sprinkle of fresh fruit on top for an extra burst of flavour and texture.
