600 grams of milk-fed veal
Black pepper to taste
1/2 tsp garlic powder or granules
80 gms butter infused with garlic and rosemary
For the chimichurri sauce
70 gms chopped parsley
50 gms chopped coriander
2 to 3 minced shallot
3 to 4 garlic cloves
200 ml olive oil
100 ml apple cider vinegar
Blend all ingredients in a food processor and then add the liquids
Brush the veal with oil and then season it with the spices.
Grill on charcoal-based barbeque for four minutes on each side to get a medium-rare steak. This will give the steak a smoky flavour.
Baste the meat with butter.
Drizzle with chimichurri sauce as desired ans serve hot.
