Nada Matar, the consultant to the cafe and a health coach, told Gulf News that this style of juicing retains more nutrients, as opposed to centrifugal: "When you use a centrifugal juicer, its speed creates a lot of heat, which quickly breaks down the enzymes in the fruit and vegetable, causing oxidation. The fruit loses its freshness, where the nutrients are. But if you're on a budget, centrifuges are more cost-effective, accessible and faster than cold-press juicers."

Yet the slow, grinding process of a masticating juicer yields drier pulp after squeezing out all of the juice, and produces a less foamy drink. "Cold-pressed juice is not heat-treated, which is what I recommend. We use a 240-watt Kenwood slow juicer - we're able to produce for the entire shop with it, and it does an amazing job for its size, extracting all the juice out of the fruit," Matar said.

Over at The Acai Spot in Dubai Marina, the eatery prefers the durability of a commercial-grade 200-watt Kuvings slow juicer. Dmytro Umanets, the assistant food and beverage manager, says the brand survives their busy operation all day long and rarely requires any maintenance.
