Suhour recipe of the day: Makmoura bi burghol

Nabz&G's diabetic-friendly recipe for this vegetarian Levantine village dish is wholesome and filling

Serves 6 | Preparation/ cooking time: 45 mins | Difficulty: easy

Ingredients

750g or medium-sized Lebanese cabbage

1/4 cup coarse bulgar wheat

Olive oil for sautéing

1 large onion, finely chopped

Herbs for garnish

1 lemon

Method

1. Shred the cabbage into long strips.

2. Rinse the bulgar wheat.

3. Heat the oil in a pan and sauté the onion until golden.

4. Add the cabbage and bulgar wheat, season as desired and stir.

5. Cover and cook on a medium to low heat until done. 

6. Garnish with green herbs. Serve with a squeeze of lemon and pitta.
