Whip up a healthy dish with this recipe from The Oberoi Dubai's chef Epri Wintari
Serves 5
200gm Fresh palm heart
180gm Guava
150gm Grapefruit segment
150gm Red tomato cherry
25gm Chopped spring onion
15gm Chopped shallots
60gm Coconut and lemon gass jelly**
200gm Hazelnut dressing**
50gm Rocket leaves
20gm Shaved cucumber
Hazelnut dressing
20gm Hazelnut oil
10gm Dijon mustard
60gm Vegetable oil
10gm White vinegar
3gm Salt
Coconut and passionfruit jelly
250gm Coconut milk
25 passion fruit puree
2 Gelatin
1. Make the jelly and keep it in chiller until set
2. Smoke the palm heart for about 15-20 minutes
3. Make the dressing and take out the jelly, demould or cut as per your preference shape
4. Mix the guava, grapefruit segments, burnt tomato cherry, chopped spring onion and chopped shallot with the dressing
5. Make a bouquet of rocket salad with cucumber roll
