Being a Mangalorean, I grew up mostly on seafood. My favourite dish is fried kingfish. I often pull up my sleeves in the kitchen and it comes out really well, though nowhere close to the way my mum makes.

She manages to get the right tenderness and tanginess every single time. Ideally, I would like to have this dish at my own bachelor pad since most restaurants tend to overcook this delicacy.

A word of advice — let the fish marinate for at least half an hour before you bring it to flame, fry it in a thin film of oil in the frying pan and to maintain its succulence, don't over fry it.
