Festive recipe: Oranjee cake with kaffir lime mousse

Ingredients

For the cake

1 cup melted, unsalted butter

2 cups Milkmaid or condensed milk

1½ cups warm water

375g refined flour

1¾ tsp baking powder 

1¾ tsp baking soda

500ml Rasna syrup or orange Tang syrup

For the kaffir lime mousse

50g cream cheese

4 tsp icing sugar

50g melted white chocolate

2 tsp finely chopped kafir lime leaves

50g whipped cream

Method

1. Preheat the oven to 180°C.

2. To make the cake, mix all the ingredients except the Rasna syrup in a bowl.

3. Pour the mixture into a papered or floured mould and bake for 25-30 minutes until done.

4. Unmould and soak the cake in the syrup. Leave to cool. 

5. To make the mousse, mix the cheese with the sugar. Add the melted chocolate and kaffir lime leaves, then the cream and mix well.

6. To assemble, pipe the mousse on to the soaked cake. Serve chilled.
