Food blogger Kavitha Radhakrishnan shares her easy recipe for an evening snack
INGREDIENTS
10pcs tortilla bread
250g chicken, boneless and cut into thin strips length wise
For fajita:
2 onions, cut into thin strips
1 capsicum, cut length wise
4 tsp olive oil
1 tsp ginger garlic paste
3/4 tbs paprikapowder or kashmiri chilly
Lemon juice from 1 lemon
Cheese, cut into strips
Salt to taste
1/2 tsp rosemary
METHOD
1. For the fajita, marinate chicken with all the ingredients mentioned above and leave for 5 to 10 minutes.
2. In a wide pan, dry roast the fajita mixture in medium heat for 6 minutes or until the chicken is cooked and sautéed well in a fajita glazed sauce.
3. Place the tortilla in a warm pan and make rolls with the fajita filling.
4. Place a piece of cheese in the roll and arrange all the rolls in a microwave safe dish and microwave for 50 seconds.
5. Yummy fajita roll is ready. Serve along with salsa
