It’s got to be the easiest “cake” you’ll make this summer: Magnolia’s strawberry icebox cake, an American dessert that has the added bonus of not requiring any baking whatsoever. Bloomingdale’s Dubai-based bakery’s executive pastry chef Kiran Shetty last month held a demonstration for customers on how to make it at home.

Whip up some wafer cookies and cream for an easy, impressive treat
“Not only is it simple to make, it has lesser calories, as the only ingredients are home-baked chocolate biscuits and whipping cream,” Shetty says.
Also, if strawberry is not your flavour, you can use something else. “You can use any berry purée — raspberry, blueberry or any other fruit,” he says. “In the US, the Peppermint icebox cake is very popular. Or you can serve a classic icebox cake with no-flavour cream.” And, if you find it difficult to get the cookies in the store, Oreos can be substituted, Shetty says. “But the taste will differ from the classic Magnolia icebox cake and these cookies are easy to bake at home.”
Should that be too much bother, the Dubai Mall outlet sells the simple dessert too (Dh20 per slice, Dh120 per cake).
