INGREDIENTS

For kofta ball mixture
500g minced beef or lamb                   
70g fresh bread crumbs                     
50g finely chopped fresh mint         
5g ground all spice                   
5g ground coriander                   
3g cracked black pepper               
10ml lemon juice                      
Salt to taste
200g fresh plain yoghurt   
 
For spiced carrot salad
540g large carrot
3g cinnamon powder 
3g coriander powder
3g salt                                        
2g pepper                                
10ml fresh mint                         
60g semi-dried tomato        
20g toasted and chopped pistachio nuts
20g toasted and chopped almonds
20g toasted and chopped pine nuts
10ml balsamic vinegar
10ml honey

INSTRUCTIONS

1. Using your hands, combine minced meat, breadcrumbs, mint, spices, juice and salt

2.  In a medium-sized bowl, roll mixture into oval shape balls. Cook kofta on heated, oiled flat barbecue plate (or frying pan) without covering until cooked through.

3. Cut carrot into 5cm lengths. Slice pieces thinly lengthways. Cook carrot on a heated, oiled grill plate, uncovered, until just tender.

4. Blend the rest of the ingredients together in a mixture and gently toss the carrot
