Adu Dhabi/Dubai: Khaas means special in Urdu and that is exactly what the Biryani-e-Khaas limited edition menu of India Palace Restaurant boasts as it celebrates the different flavours of biryani from India and its neighbouring countries.

The menu highlights the authentic heritage biryani varieties with origins in India, Pakistan and Afghanistan, each packed with its own spices and flavour profile. Foodies can sample four outstanding biryanis and special dessert to go with each dish as part of the offering. The menu is available till the end of May at all India Palace outlets across the UAE.

Here’s what it looks like:

Noor Mahal Biryani: Named after the Noor Mahal Palace, which was the princely estate of the royal family of Bahawalpur (now in Punjab, Pakistan), this is a royal dish made with stuffed chicken koftas tossed in a special sauce and arranged like gems in a jewel. Price: Dh40

Murgh Coorgi Biryani: Made with a recipe showcasing the Coorgi cuisine, which has its origins in Kodagu (formerly Coorg) in Karnataka state of India, this dish is flavoured with black peppercorns, curry leaves, coconut, fennel seeds and ground whole spices. Price: Dh40

Bohri Chaamp Biryani: A meat lover’s delight and special to the Bohri community in Gujarat, India, this aromatic dish is cooked over a slow fire with mutton chops marinated for a whole day in green chilies and Bohri masalas. Price: Dh45

Subz Qabuli Pulao: Also known as the national dish of Afghanistan, this vegetarian Qabuli Pulao is an ethereal mix of rice and sweet warm spices, slow cooked with chana dal and decorated with caramelised fruits and vegetables.
