  • 1.6kg cauliflower florets
  • oil, for deep frying
  • For the marinade
  • 300g tempura flour
  • 1 tsp turmeric powder
  • 10g salt
  • 100ml lemon juice
  • 10g fresh ginger, chopped
  • 10g green chillies, chopped
  • Water, as required
  • For stir frying

  • 100ml oil
  • 10g garlic, chopped
  • 10g ginger, chopped
  • 100g onion, chopped
  • 300g red bell peppers, diced
  • 300g green bell peppers, diced
  • 200g tomato ketchup
  • 100g tamarind chutney
  • 30g spring onion
  • To serve (optional)

  • 4 Parmesan cheese baskets


  1. Mix together all the ingredients for the marinade. Marinate cauliflower for 15 minutes.
  2. Deep-fry in cauliflower in medium hot oil until golden brown and cooked through.
  3. To prepare the stir-fry, heat oil in a pan and add garlic, ginger and onion. Cook until onions turn translucent. Add bell peppers and cook for another 3 minutes. Add tomato ketchup and tamarind chutney. Mix gently.
  4. Add cauliflower and toss gently until the sauce coats the cauliflower well. Sprinkle chopped spring onion over and serve hot in a Parmesan basket.
