  • 1 nectarine, quartered
  • 2g vanilla beans
  • 5g sugar
  • Pinch sea salt
  • 80g chicken breast, cubed
  • 1 tbsp olive oil
  • For the salad, mix together

  • Handful yellow frisée lettuce
  • 10g pitted kalamata olives
  • 20g asparagus tips, blanched
  • 4 sun-dried tomatoes, chopped
  • 25g avocado, chopped
  • For the dressing, whisk together

  • 2 tsp honey
  • 2 tbsp olive oil
  • 2 tsp white vinegar


  1. Toss nectarine with vanilla beans, sugar and sea salt and refrigerate overnight.
  2. Heat olive oil in a grill pan, grill nectarine until soft then remove from pan. Grill chicken cubes until cooked.
  3. Arrange nectarine, chicken and salad on a plate, then drizzle dressing over.
  4. Serve immediately.
