Recipe: Fresh apricot tart

  • 225g plain flour
  • Salt, to taste
  • 20g icing sugar
  • 5g orange zest, chopped
  • 115g butter, chilled and diced
  • 3 tsp iced water
  • Vanilla extract, a few drops
  • 1 egg yolk
  • 100g crème fraîche
  • 30g sugar
  • 200g fresh apricot, quartered and deseeded


  1. Blend flour, salt, icing sugar, orange zest and butter in a food processor until it has a breadcrumb texture.
  2. Sprinkle enough ice water for the dough to come together, then add vanilla extract. Set it on a floured board and mix again.
  3. Wrap dough in a clingfilm and chill for 15 minutes.
  4. Once chilled, flatten the pastry lightly around a rolling pin and then unroll it over the greased pie dish. Trim off excess pastry.
  5. Prick the bottom with a fork in six places and put in the freezer for 10 minutes.
  6. Remove from the freezer and line it with baking paper. Fill with baking weights.
  7. Bake for 15 minutes in a preheated oven at 200°C.
  8. Remove from oven and reduce heat to 180°C. Remove weights and baking paper. Set aside.
  9. Meanwhile, mix together egg yolk, crème fraîche and sugar in a large bowl and pour into a tart case.
  10. To that add apricot and the baked dough mixture and bake again in the oven for 30-40 minutes until it is set. Serve warm or cold.
