  • 200g frozen peas, defrosted
  • 85g watercress, roughly torn
  • 400ml cold vegetable stock
  • 75g mint leaves
  • 1 lemon, juice and zest
  • 4 tbsp yogurt, to serve
  • Salt and pepper


  1. In a food processor, blend peas, watercress, stock, mint, lemon juice and zest until puréed. Season with salt and pepper.
  2. Chill soup in refrigerator. Ladle into bowls and serve with yogurt.
