Recipe: Cherry and chocolate cupcakes

These melt-in-the-mouth treats combine a fruity cherry flavour with chocolate to perfection

  • 90g unsalted butter
  • 1/2 cup castor sugar
  • 2 eggs
  • 1 cup self-raising flour
  • 20g cocoa powder
  • 2 tbsp milk
  • 2 tbsp cherry jam
  • For the icing

  • 2 tbsp cherry jam
  • 1-1/2 cups butter
  • 1-3/4 cups icing sugar
  • 1/2 cup cream cheese
  • 50g dark chocolate shavings (for best results – shave refrigerated chocolate with a vegetable peeler)
  • 20g cocoa powder, plus extra for dusting


  1. As the first step of baking cupcakes, cream butter and sugar well. Add eggs slowly to the
  2. creamed butter and sugar frosting.
  3. Mix flour and add milk and cherry jam. Spoon this batter into muffin cup lined trays. Bake at 180C
  4. for 16-18 minutes.
  5. For the icing, spread 1/2 tsp of cherry jam directly onto cooled cupcakes. Cream butter
  6. and icing sugar until light and fluffy, and mix in sifted cocoa powder.
  7. Spread icing evenly over the layer of cherry jam. Sprinkle chocolate shavings over layer of icing. Dust lightly with cocoa powder.
  8. Tip

    • Don’t overfill the tins. If you do, the batter could spill over. An ice cream scoop works well to ladle cupcake batter into the tins.
