How to make arayes at home

  • 30g white onion
  • 25g fresh tomato
  • 10g mint leaves
  • 150g lamb, finely minced
  • 5g Arabic mixed spices
  • 10g pine seeds
  • Salt, to taste
  • 1 large khubz (Arabic bread)
  • For garnish

  • Parsley
  • Lemon juice
  • Onion


  1. Finely chop onion, tomato and mint leaves. Add to minced lamb along with mixed spices, pine seeds and salt. Mix well.
  2. Halve the bread horizontally, but do not separate.
  3. Spread the lamb mixture over the bottom half of the bread and cover it with the top half of the bread. Press gently.
  4. Place gently on a moderately hot grill or barbecue and let it cook until the bread becomes golden brown and the meat is cooked through. Serve hot with a mixture of sliced onion, chopped parsley and lemon juice.
