Buffalo Milk Kulfi with Alfonso Mango Slices

Serves 6
Ingredients
1 litre buffalo milk
200g sugar
5g crushed cardamons
10g pistachio, finely sliced
10g almonds, finely crushed
1g saffron
2 medium-sized Alfonso mangoes (or any other sweet variety of mango)
Preparation
Heat milk in a heavy saucepan on high heat, stirring continuously until it is reduced by half. Add sugar, pistachios, almonds, saffron and cardamom seeds and let it boil for 3 more minutes. Allow to cool. Pour mixture into round moulds and freeze for 6 to 7 hours. Once set, remove kulfi from moulds and place on a dessert plate. Peel and slice mangoes into lengthwise strips and carefully shape each slice into a circle. Layer mango circle over kulfi, sprinkle pistachio and serve chilled.
