Dubai: There’s nothing quite like fine dining on top of the world. Or at least at the highest restaurant in the world—At.mosphere on the 122nd floor of Dubai’s iconic Burj Khalifa.

A new summer menu gave me another reason to visit the place for an evening degustation treat. To maximise the experience, my dining partner and I arrived just before sundown to enjoy the panoramic views from our table by the window. The bird’s eye view of this growing city was just amazing!

After sunset, our attention turned to the culinary show happening right at our table. The 8-course meal began with a delicate panacotta topped with smoked salmon and beetroot reduction, a contrast of flavours that tickled my tastebuds.

What followed were beautifully plated starters accented by fruits, flowers or herbs: a hot pink ensemble featuring a rich and buttery foie gras torchon encased in a dark chocolate shell. It went really well with the homemade bread served at our table.

I also enjoyed the perfectly tender seared scallops paired with a dollop of avocado sorbet—the contrasting flavours and textures sat surprisingly well on my palate.

The dry aged beef tenderloin was perfectly medium done and was a delight to finish but what really mesmerised me was the fried sea bass on a spiral bed of carrot puree that quite literally created a ripple on the plate with a side of carpet shell clam, baby squid and puffed rice. 

Everything on that plate looked and tasted great.

The show stopper came last with a very inventive crème catalon sphere—a rich custard with a hard caramel topping perfectly contrasted with the slight citrus flavour from the drops of calamansi gel on the plate. Pure art on plate.
