INGREDIENTS
2 tbsp olive oil
250 gms cherry tomatoes, halved
1/2 tsp sugar
6-8 tomatoes, sliced
200 gms chunky cottage cheese
300 gms Feta cheese
110 ml basil pesto
1/2 cup finely-grated mature Cheddar
1 box lasagne sheets
Fresh basil leaves, to garnish
METHOD
1. Grease an oven-proof dish with 1 tbsp olive oil.
2. Spread a layer of sliced tomato in the base of the dish. Sprinkle with salt, pepper and sugar. Drizzle with remaining olive oil.
3. Cover with a layer of lasagne sheets. Mix together cottage cheese, feta and basil pesto.
4. Spread a layer on the lasagne sheets and top with another layer of lasagne.
5. Add a layer of tomatoes, the remaining cheese mixture and top with cherry tomatoes.
6. Sprinkle with cheddar cheese.
7. Bake in a preheated oven until the lasagne sheets are tender.
8. Sprinkle with fresh basil leaves and serve.
Note: Serve with crusty bread and a salad.
