They only appeared in The Return of the Jedi, but their importance was so great that without them the destiny of the Galaxy would have been completely different. George Lucas wanted a primitive race to be the ones that would demolish the Empire. He'd thought this race could be the Wookiees, but as, like Chewbacca, they were experts in technology, he then decided to create the Ewoks.

The Ewoks were apparently inoffensive furred bipeds native to the forest moon of Endor. They helped the Rebel Alliance defeat the forces of the Galactic Empire at the Battle of Endor.
They responded when the Galactic Empire burst into Endor and established a base with a shield generator to protect the second Death Star. The Ewoks were crucial to that shield generator getting destroyed.
The baby Ewoks were called Woklings and were always under the care of their mothers. The Ewoks were omnivorous and used spears, slings and knives as weapons. For transportation they used hang gliders, battle wagons and bordoks. Ewoks had problems in progressing past stone-level technology, although they were extremely skilled in forest survival and successfully used primitive technology to create gliders and catapults.
One of the most remarkable Ewoks was Wicket W. Warrick. He fought against the Marauders to rescue his town and his human friend Cindel Towani. Years later he helped princess Leia Organa, serving as contact between his town and the Rebel Alliance.
Another well-known Ewok was Logray, a doctor-wizard who wanted to offer Han Solo, Chewbacca, R2-D2 and Luke Skywalker as sacrifice to his just adopted god, droid C-3PO.
The Ewoks became so popular with fans of Star Wars that they even spun off into an animated television series under their own name.
